RESTAURATEUR Ele Troise has leased three adjoining spaces within Cbus Property’s West Melbourne development Volaire to open his latest eatery, to be known as Sassy.
Troise leased all three shops of a combined 380sqm available at the project, located at 9 Dryburgh St West Melbourne, in a deal negotiated by Fitzroys’ Rick Berry and Ervin Niyaz.
“Outside of the Errol Street shopping precinct, there is limited retail and hospitality in West Melbourne,” Berry said. “The last time there was a restaurant of note in the immediate area was La Chaumiere, a favourite for ‘in the know’ city types seeking a discrete ‘long lunch’.”
Rents in the range of $350 per sqm to $400 per sqm are a realistic expectation for a tenancy of this type and size.
