UP-and-coming chef and entrepreneur Adrian Trimarchi has secured retail space to open a new restaurant at Docklands.

Trimarchi signed a deal to lease 200 sqm at 2 Waterview Walk to launch his new fresh pasta bar.
“I saw an opportunity to offer fresh and delicious handmade pasta to the corporate market.
“This area of Docklands has a high concentration of premium office towers; they will love my range of pasta and meals, catering to many tastes. There’ll be a small range of non-pasta dishes as well for those wanting a different Italian experience, and a few breakfast options for the early riser,” Trimarchi said.
The lease was negotiated by Fitzroys manager Andrew Hewett, who said Docklands has attracted many quality restaurateurs.
Fitzroys has also leased Docklands spaces to Remo Nicotine’s Non-Solo Pasta, Storey by Dukes Coffee Roasters, Johnny Di Francesco’s 90 Secondi, Elie Helou’s Salud, Pok Pok Street Food and Black Cod by Tony Sdregas.
The deal comes as the last of the hospitality venues in Medibank to the north and Collins Square to the south fit out. Fitzroys were the leasing agents on the Medibank retail complex and received hundreds of enquiries due to the offering sitting on the walkway from Southern Cross Station to Etihad Stadium.
